Italian olive oil is one of those subjects that I wish I had learned more about because it's a fascinating subject. However, it was one of those matters that never stacked itself high on my priority and instead I felt like it would be the same as researching a cult movie I had heard about from a friend. It was simply something that had fallen off of the radar many a time, until now that is. Now with more knowledge being made more available to me, I certainly feel wiser about this oil.
